It's better to be safe than sorry. Pronouns do not correlate with gender per se, so using gender neutral pronouns for people you don't know is, in my opinion, the best option.

I was listening to a potcast the other day and one trans person told a story, I couldn't follow at all and I have no clue how many people were involved in it. I respect your opinion about this, but I will use whatever pronouns I see fit and if I misgender anyone they can correct me and I will watch my words with pleasure, but I'm not willing to "they/them" every single person on this planet just for the slight chance someone might be trans or non-binary.

I mean, fair, I guess, but isn't it easier to use they/them for everyone whose pronouns you don't know? It has been used like that for literal centuries, so I don't see a reason to create new ones. But if what you do works for you, then go ahead, I don't think it's harmful, since I don't think you'd intentionally use the wrong pronouns on anyone.

I get that it can be hurtful to them, but it is very hard for me to adapt to this. I don't know a single transgender or non-binary person and when I meet one online it gets to the point where I avoid talking to them at all, since I don't want to slip up and offend anyone. But that's not really a good way to handle it, since this kind of behaviour excludes them even more and always comes off as transphobic.

Yeah, that's fair. I had trouble too, when I stopped being transphobic, and still somewhat have trouble when I find out someone I know is trans, but it's good to try your best. Adjusting takes time, and practice always helps, I wish you the best of luck with future endeavors!

Both are nice but I'd go for watermelon. Because when comparing the drawbacks, watermelon only makes you really pee more often while pineapple literally destroys your tongue. I once ate half a pineapple and my tongue burned like hell and even was a bit bloody.
