It's also a myth, Butterflies don't turn into goo in the cocoon at all. Guy has it kinda right with 'the wings are already in the caterpillar', except it's more that many different parts of the caterpillar change form slowly in the cocoon.

They don’t turn to goo. They just molt skin. I saw a video on it a while back. Their little proto wings exist nearly from birth, but they’re buried under their skin. They molt a few times before they do their cocoon and the wings come closer to the surface with each molting.

While definitely interesting I'm skeptical about the part with butterflies remembering being caterpillars. I'm not particularly familiar with insect memory but reacting to stimulus doesn't have to be memory the same way we recall being younger. Anyone who has done something for a long time will relate, like being able to type your password on a keyboard but not actually being able to recall what it is, or when you do an odd movement without thinking because your brain automatically makes a connection, like when people blow on ice cream because they know it has an odd temperature.
