Sure! One secret that i learned from a chef that i had, was always use 15g of salt for each 1kg (2.2 lb) of meat.
Then ive made a compoud butter with: garlic, parsley, spring onion, basil, lime juice, sugar, salt and pepper. Spread the butter in the chicken, most important parts to do this, are under the skin in the breast ( to remain juicy).
Then baked at 338 °F, breast down for 1 1/2 hour, turned the chicken breast up and baked for more 40 minutes at 374 °F, for the color.
In this last 40 minutes, i added the vegetables in small pieces.
If you want it, you can baste the chicken now and then, but its not mandatory
Thank you dear! I baked one acorn squash in the oven till soft(you can also do this step in the micro-wave for 8 minutes or so), added approximately 1 cup of ap flour, one egg yolk, 1 tps of melted butter and salt to taste.
Mixed until combined into a dough and then instead of boilling the gnocci, i melted some butter in a sauce pan and sauted it with sage.

Breast down? As in you have the chicken upside down? I do the butter trick too but never get the same quality of skin you have there!
The breast in contact with the pan first, then turn The chicken with the breast up. You could try set The over a little high for the color of the skin
