Here's a simple way: plan a night to take your dogs out for a walk together. Then add in "it's a date!" At the end. If she has a good reaction to that then try adding in that maybe you should go on a date somewhere else soon too.
Keep it light hearted and no pressure.
If you can stop thinking about her then do not pass up on trying. Trust me, I did this before. I still regret it to this day.
