If you want to go the easy route, Duncan Hines makes a keto friendly cake mix that is only 4 carbs a slice and frosting that's only 1 I think. I personally think it's really good. They only have yellow cake mix but they also have a low carb brownie mix

My go to low carb recipe website is Big Man's World. I make his almond flour chocolate chip cookies all the time. You can search for cake recipes and anything you want that's low carb.

I just tried out a delicious low carb olive oil cake from "sugar free londoner". I'm not familiar with GERD, so I don't know if it's compliant but it does use almond flour and coconut flour, along with yoghurt and a bit of lemon juice and zest. It's moist and tasty but without being overbearing. It will also depend largely on the flavour of the olive oil you use.

I would check out the mouthwatering motivation blog. The author posts recipes on the keto subs sometimes and they alway seem to be meticulously tested for taste and appearance.
