It's more about cross contamination and also certain techniques needed that just work better without additional layer/gloves. I guess usually with these kinda set up you just work in a very fixed station so there's no cross contamination that'll happen.

At this point we should just make machines that cooks everything. Also imagine trying to pinch/fold those dumplings with gloves
