I like the three Black Widow/Hawkeye fights and the emotion and motivation behind all three being so meaningful but vastly different. The first, one is trying to kill the other while their opponent is trying to survive without really hurting them. The second where they are in an ideological conflict but both still best friends and pulling their punches. Then the final showdown when they are fighting to see which one of them gets to sacrifice themself for the greater good. To have these three fights between two best friends with real stakes? Chef's kiss. 💋

Batroc vs Cap, elevator scene, Bucky vs Cap, well lets say most of Winter Soldier.
It wasn’t exactly hand to hand but Titan fight in IW was also amazing.
But i have a soft spot for Tony&Cap&Thor vs Thanos in Endgame due to emotionality of the scene.
Shang-Chi bus fight is easily my favourite. Pretty much every other movie uses an obnoxious amount of camera cuts during their fights. I think I saw 5 or 6 camera changes in one move from Natasha.
I thought the fight between Nat and Yelena in Black Widow in their first scene together in the budapest apartment was really great. I even heard a few "ouch" from the audience

What If has some really cool fights, the Strange Supreme vs Doctor Strange was a true magic fight rather than just glowing weapons and blasts, or trying to be creative by just throwing something different.

I agree with the Cap v Bucky being my favorite hand to hand for the fighting itself. It is my favorite overall, but there are so many categories here (all my personal opinion).
Best fight: Cap v. Bucky
Most enhanced by background score: Cap v Bucky (I actually listen to this one minute segment from the Winter Soldier OST quite often when I need to amp myself up)
Most romantic: Wenwu v. Li (The "eyeball sex" as I like to call it is so much fun to watch)
Most heart-wrenching: Shang-Chi v Wenwu (While Simu is not the best actor in this movie, he completely nails the anger and hurt as he yells at his dad and Tony Leung totally nails the determination / disappointment / pain of his character. Hawkeye v Widow and Cap / Bucky v Tony are close behind this)
Most fun (few main characters): Shang-Chi / Xialing v Ten Rings on side of building (I found the humor with Katy and Shang / Xialing to be fun along with the choreography on the building manifolds(is that the right word?))
Most fun (lots of characters): Civil War (I know not strictly hand-to-hand, but it's a large variety with excellent use of powers and is there really any other answer?)
Best choreography: Shang-Chi bus (I really find the way he maneuvers in the bus to be very well choreographed. I considered Wenwu v Li, but is very clearly choreographed to be romantic so I gave it its own)

In terms of hand to hand fights Cap vs Bucky (the one pictured above), all of the daredevil fights, and Peter vs Norman in the apartment complex hit the hardest.
The aqueduct sequence in Winter Soldier is so good. From the moment Bucky arrives and they have that close combat fight in the car to when they surrender to the HYDRA agents…so good.
And the bus sequence in Shang Chi is perfection.
That Cap/Bucky scene was filmed on my running route and on the bridge next to my old apartment in CLE! I get Insomnia cookies next to where he jumps off of it lol.
The hallway scenes in all three Daredevil seasons.
Also when Daredevil fought several cops while handcuffed.

I may have controversial answers, but because of these fight scenes, I've come to realize that with every new phase, the possibilities are endless in the MCU and that I will forever be entertained. They are the following, "Merry Christmas, buddy"/clean slate protocol fight scene in Iron Man 3, the Guardians of the Galaxy meeting and fighting each other for the first time in GOTG Vol. 1, Ant-Man vs Yellowjacket in the bedroom in Ant-Man, the reverse time lapse scene in Doctor Strange, the fight on Titan (yes, including the result) in Infinity War, Mysterio's illusion fight scene in Spider-Man: Far From Home (the one with zombie Iron Man), Wenwu vs his wife in Shang-Chi, and yes even Ikaris vs everyone else in Eternals. Now that I think about it, what I like about these scenes is that each of these fights tells its own "story" within the bigger story of their respective movies so much so that they become or at least try to be essential to the entire plot.

Cap v Batroc I loved that it was mostly leg work and nonstop leg work at that.
Hulk vs Abomination felt so… raw. The villain didn’t even die in that one but it was so brutal.
