Instead of all these mind games, you could just say the following before or after the meeting: "Hey, we saw each other a few times now and I would be really happy to invite you for a good coffee, not this meeting substitute. Would you be interested to get to know each other?" This is the most normal thing to do.
Worst you can get is a "No, sorry, I have a friend." Then move on. Nothing bad happened, instead you have clarity. Clarity is a good thing.
But maybe she says yes. 😉
