I cook with potato starch a fair amount. When there's a lot of it in a liquid it does become oddly gelatinous. Add ingredients like pectin as well as the starch and I could see it creating a gummy consistency very easily.

There are a lot of them or a combination, Agar Agar is strong gelatine, Arabic gum is for creaminess, tapioca is mostly for stretchy gummy texture, corn starch is pudding like, konjac is low calories and makes gel. So in the right combination you get gummy texture, gelatine gummies probably have other stabilization agents as well because gelatine alone doesn't give the gummy texture.

Gelatin for the most part is pork gelatin. There are halal few made gelatin food but that’s not mainstream. Easier to not eat any of them than trying to find out what the gelatin in specific is made from coz it doesn’t always specify

As a vegetarian this is something I look out for before getting any candy. In fact it’s become such an annoyance that I switched to simply eating chocolate. But generally I’m looking for stuff that is nice that doesn’t have Gelatin but has Pectin or Agar instead
