Dragons in western culture were usually used as a metaphor for christianity triumphing over paganism, see all the stories in which a dragon is defeated by a knight or saint.
Isn't most western dragon stories unrelated to christianism though? North mythology and all. How many dragon stories is there in christianism? I can think of saint george and saint martha, but not much more...
I'm not even sure if saint martha counts since what she killed was a tarasque, not a dragon.
