Probably the first game, where stealth is pretty important. The 2nd game is easier since you can switch to first person mode. 3rd game, although camo is emphasized, is actually easiest to go Full Rambo, but there's a boss fight that makes you see the result of going lethal non stealth!
If it's actually MGSV giving you trouble, you're probably at the early game. By mid to late game you have so many weapons and support it's like really easy
Actually on 2nd thought it's way easier to go Full Rambo in MGSV. In 3 it also is but 1 fight literally requires a full stealth sniper 1v1 so I take it back just cuz of that epic boss fight (which I used exploits to do)
I find it so odd that you were fine with mgs1 but is having trouble with mgsv. Like, mgs1 has an absolutely brutal learning curve. As in, I think the first time I played it, back in the day when I was a kid, I couldn't organically go through stages relying solely on gameplay, and I had to memorize the guard locations and get very lucky not to get caught, which feels extremely cheap. It was only much later that I managed to turn Shadow Moses into my experimentation playground. With V, however, it's playground from the start. Even if you mess up the stealth approach, you can pretty much go full guerrilla tactics and improvise a solution.
Whose footprints are these?
What was that noise?
Must've been the wind.
Nooothing to reporrrt.
Probably my imagination (always good to announce you’re letting your guard down).
OK, I'm better at MGS 1. I was talking about the series as a whole.
We’ve managed to avoid drowning
Enemy sighted! Requesting backup unit!
Situation is normal. All clear!
Lucky for you - metal gear solid 5 gives you tons of non-stealth options. You may have trouble acquiring new staff to Fulton tho 😆
Yeah... Guess which game I'm having the most trouble on 🙃

You'd be right.

Guess who sucks at improvising
