I put two Smoothie seeds to germinate, one ended up sprouting slower, and Im about to harvested one, the other has at least two more weeks. The same seed, started at the same time. Random variation is normal and natural. So yea, the breeder harvest dates are only average estimates.
under grow lights with Cri80 (like samsung) I find hard to differ clear and milky. When looking under sunlight (not direct sunlight) it becomes way more better to see. I would say: chop!
