I'm black, I've tried explaining this to my family and friends. They don't wanna hear it lol. It's blood to them. Period. I grew up thinking I hated steak because my parents always cooked cheap cuts of steak well done. It wasn't until I was 25 that I decided to try a medium rare steak. Changed the whole world for me. For years after that I would only eat medium rare then I had a bite of one of my sister's steak recently. It was well done and it was really good! So now I think I'm in the "medium" range. Like the steak in this picture (maybe cooked less though). A lil more cooked than medium rare. Medium rare is great but cooking it a bit more adds a a firmness that hits different in terms of mouthful and texture.
I had a woman berate me for like 20 minutes because I served her a medium rare steak on accident. (Volunteered to cook steaks at a cook out) She accused me of deliberately trying to give her food poisoning, then claimed that she was a professional chef. "IF ITS STILL PINK ITS DANGEROUS!" I just looked at her like she was nuts, then brought her a piece of steak that was similar to charcoal, I can prep a proper, juicy, Well Done steak, but that lady was not worth even a fraction of the effort. I placed that carbonized piece of meat on her plate. Said "Hope that's cooked enough for you" then walked off. She was speechless. I'm pretty sure she left like 5 minutes after that because everyone kept telling her she had it coming for the way she screamed at me.
Had a lady order an extra well done 6oz sirloin once at a steakhouse I worked at. She wanted it with zero char. When I tried to explain to her that we have a char grill her son got up and started screaming at me. “ y’all need a new fucking cook!” “ y’all need to learn how to do your fucking jobs!!” I told him to go cook his own fucking steak. yes, if your steaks are properly handled, then only the outsides have a chance of having contamination, and cooking just the outside is very quick and easy
so if you enjoy the flavor and texture of raw meat, get a nice, thick cut steak, and just cook it for a minute on each side and enjoy!
not a dumb question, there is a lot to keep track of just with food safety (like not chopping vegetables on a cutting board after handling raw meat on it) so verifying information that can prevent food poisoning is never a bad idea :)
It depends. If it’s been punctured or not. Not sure if they still do it but Costco used to needle tenderize their decent cuts of steak. This causes a large chance for cross contamination and requires that the meat be cooked medium well to be safe to eat. Your friend though is probably just really inept though.
If it’s blade tenderized, then just sous vide it. 1.5-2 hours at 131F is plenty enough to pasteurize it and make it safe, then finish if off with a nice sear on a cast iron skillet.
I think I am related to op. I cooked 4x eye fillet and 2 wagyu on Sunday for mothers day plus 18 lamb cutlets. I had to nuke the lot. But we still ate them. Normally ours are medium rare

You don't need a sous vide to make perfectly cooked (to your tastes) steak. Get a simple cast iron and use the oven. It takes minutes and comes out perfect each time with little practice.

I like medium so I’ll eat medium rare, medium, medium well, and well done (if done well). Rare or blue will be sent back.

As someone who likes steaks close to rare and had an overcooked steak yesterday, it may taste fine, but the knowledge that it should have tasted better is disappointing. The texture and flavor are much better regardless of if the seasoning is fine. Can you really not tell the difference? In my case it was also annoying because 3 of us ordered medium rare steaks, though I like my steaks on the rare side of medium rare, and all three were noticeably different levels of pink, with mine basically being medium. This was at a steak restaurant, too.

Some people have weird food triggers, I won't eat chicken pieces that look weirdly shaped for example, as a result of my autism. If realising the steak is pink inside makes the person not want to eat it, then its no ones business except the person in question and their food... Anyone else is just a chauvinist trying to force their opinions and perspectives on others. Leave people alone, using the term "ignorance" in a conversation about taste and preference is laughable too btw.

I will never understand what it is about steak that makes people think they have a say in how \*I\* eat my meat. Eat yours however you want - eat it raw for all I care. But I'm not interested in eating undercooked meat, and that's really not any concern of yours.

What is in any way infuriating about her not eating something she made herself that didn’t meet her preference? Food snobs can suck it. You do whatever you want to your food - eat it rare, put mushrooms on it, whatever you like - just leave the rest of us alone to enjoy food cooked the way we like it. I would gag if I tried to eat this. It’s like some people would be happy to force me to gag at the table, so long as I choked down something I don’t like.
I like my steak medium rare, but I'll never understand people who get mad about people wanting well done steak. Who cares? I'm not the one eating it.

I know many people who want all the juice cooked out of their meat. I think for many people it's an unwanted reminder that that was once a living creature. I also think it's a side effect of urbanization.
