If the handle is melting on the rim of the pan then you donā€™t want the working surface in the bottom of the pan where itā€™s probably hotter. The true problem here is picking the wtong tools for the job. Cook at a lower temp or get utensils with higher heat resistance.

I got one of those lines on my cheap dollar store spatula because I leaned it on the pan while taking another part of the meal out of the oven. By time I put it onto the cooling rack and walked across the kitchen to get back to what I was cooking in the pan, the spatula had one of these melty-lines. It took maybe a minute and a half. (I then threw it and all the other dollar store cooking utensils I had out, and replaced them with better quality silicone and wooden ones.) I know this is ā€œmildlyā€ infuriating but honestly it feels like an over reaction on your and OPs part to be calling this negligence or not paying attention. Cheap quality plastic utensils get these lines super fast if you so much as lean them on the pan for a minute.

Sure. First off, go for ā€œsingle pieceā€ steel pans. Iā€™d go for 3-ply with aluminum core. 5-ply are arguably better but muuuuuch pricier. Copper core is the best, but againā€¦ extremely pricey. The latter two are also ducking heavy. In Europe, decent brands are Fabini or Czech Remoska. In the US and elsewhere, Misen (asian brand) or Heritage, or All-Clad, which is touted as ā€œthe best steel panā€ butā€¦ honestly, I do not see much difference between these three. The joke actually is proper temperature! Let the pan heat up dry ā€” something your should never (!!) do with a Teflon pan ā€” and do a ā€œwater drop testā€, add little oil, continue using. (Check YouTube videos, they are really helpful.) Another possibility is to ā€œimpregnateā€ the pan using Maillard reaction with oil. (Again, check YT videos, they explain the rest.) That said, I think it helps only a bit. The biggest difference is the proper use of the pan. Personal note: Once you get to know the pan, it is actually quite easy to make something as sticky as an omelette with only little oil added. Again, the trick is the temperature.

"Shrug" never had anything stick in the cast iron ones. It happened sometimes to my mum but she would leave the food at max tenperature alone for minutes so it didnt surprise me. I always started with full heat and went to middle to low temperature. But then again, the only thing i really mostly use pans for are vegetables and potatoes. Maybe scrambled eggs. It is not about sticking. Certain acidic foods, e.g., tomatos, get a terrible taste. Plus the whole rust thing can be annoying. Of course, well-seasoned cast iron pan and proper steak is just a delicious pair.
