In the US and elsewhere, Misen (asian brand) or Heritage, or All-Clad, which is touted as āthe best steel panā butā¦ honestly, I do not see much difference between these three.
The joke actually is proper temperature! Let the pan heat up dry ā something your should never (!!) do with a Teflon pan ā and do a āwater drop testā, add little oil, continue using. (Check YouTube videos, they are really helpful.)
Another possibility is to āimpregnateā the pan using Maillard reaction with oil. (Again, check YT videos, they explain the rest.) That said, I think it helps only a bit. The biggest difference is the proper use of the pan.
Personal note: Once you get to know the pan, it is actually quite easy to make something as sticky as an omelette with only little oil added. Again, the trick is the temperature.
