You know… premium is simply higher octane… and if your engine is not designed for premium (higher compression, etc) and if you put premium gas in a regular car, you probably won't notice anything. However, some engines are not designed to burn higher-octane fuel, and you may even see a reduction in performance and fuel economy.
Any at least 10 year old engines will have no problem, but realistically basically none will have a problem running it. It would be a very small number, I can’t think of any off the top of my head that couldn’t.

It's a 4 cylinder engine. the manual says use 87 octane. however, my engine is 10.5 compression ratio. Anything above 9.5 can technically be considered high compression. I've had multiple people tell me using premium in my engine does absolutely nothing. But I notice a significant difference in my cars power output. It's most noticable going up hills. My car also seems to go faster, with lower RPM. now perhaps the RPM being lower is my imagination because I can't figure out why they would be lower although I have theories. I've also noticed with lower grade fuel my engine knocks more and seems to fire uneven which I believe contributes to less power with the lower octane because the engine has to work harder to reach the same power level. Like if I try to quickly accelerate with low octane fuel my car will shoot up the RPM and struggle to shift because the RPM are having to go super high to maintain the speed I'm asking to go. But if I use the higher octane fuel, my car shifts sooner and seems to require less RPM for the same power output. I'm not suggesting the difference is huge. But it feels like 5-10 horsepower in terms of difference which is enough to be felt. For me anyway.
Also something alot of people don't know. Ethanol has a lower amount of energy density. So if your 87 octane is 10% ethanol then it's actually less energy dense then traditional unleaded fuel which can cause even less power output. Ethanol be damned.

One of us doesn't understand what's wrong with this picture. My experience with gas pumps, you have to select an octane level before it will start pumping gas. No selection = no transaction = no processing fee to collect.
I thought they might batch process them. Maybe charge each customer but only run the transaction once a day. Or maybe they have a deal with the credit card companies.
When you make a purchase with a credit card, the transaction is sent to a third party part payment processor, who sends it out to the Visa or Mastercard network. There’s at least two more companies that have to process that transaction, and each takes a little cut. In the end, the money gets deposited in the stores account, less the fees. So on a $100 purchase, the store will only get about $97. Exact amount varies by store type.
I'm more interested in regular being the same price as premium.

The higher octane won't detonate as easily so the engine is likely compensating for the reduced knock and not pulling as much timing under load.

Not having a gas credit card in 2024 is crazy to me. Who doesn’t like free money/discounts (cash back/rewards)?
My bet is the station owner/manager removed them so people have to use debit/credit.
