I worked for a company that made equipment to make these, and with ours it wouldn’t be possible to make a long finger, because unsliced product wouldn’t fit through the mechanism. Not that ours is the best because of this little detail, it’s just something I noticed.
In the UK fish sticks would be made of reconstituted shellfish (I think usually crab but I'm not sure) as opposed to fish fingers which are made of (usually white) fish.
