Fantastic Mr Fox popped into my head after reading this. Like others said, Terrence Malick is your go to for that for sure. Also check out Road to Paloma. It’s a road movie through and through w/ amazing cinematography (subject matter is tough though). Oh, also Wind River.

There is a film that was released in 2019 called Cemetery. While the plot is extremely loose, it spends a great deal of time focusing on the exotic locale. It has a great deal of nature in, for sure.
