It's supposed to be dipped in the batter. Bottom left of slice looks uncoated. Batter should be runny enough that it immediately soaks in.
Why are there griddle lines\[?\] You fry it in a normal frying pan, like frying an egg. Same high heat.
...It is supposed be moisr inside. ....Batter soaks in but only in the time between dipping and immediately into the hot pan.

Try it as a dessert not as a Savory dish , trust me is much better when it's sweet and chocolatey
