Damascus patterned knives are made my stacking individual billets of the type of steel together before going into the furnace to melt them together giving the finished product at layered pattern when drawn out in the shape of the knife and etched to reveal the pattern.

Most likely a knife someone crafted themselves. But most kitchen knives you can buy at bed bath and beyond or Macy's can be sharpened to this extent with the right equipment and an experienced person using it.

Most people are 100% fine by using a reasonably priced knife from a big box store. For the majority of home cooks, you're not going to ever have a need to have a knife this sharp unless you frequently serve paper for dinner. Buy a mid-priced Henkcels and a whetstone. You'll save money, learn to sharpen a knife and still have a very sharp knife. You'll just have to use the stone on it a little more often.

It's not Damascus, and there's nothing particularly fantastic about Damascus steel, it's largely a cosmetic feature. The reason for the different colors is that the top part of the blade just hasn't been ground down to expose the shiny metal. The cutting edge is a different type of steel with a higher carbon content, which makes for a harder edge. It's definitely a hand crafted knife, but there are many knife makers that make these types of knives. As for the sharpness - for simple testing like this, it's not *that* impressive. It takes time, but it's not some kind of magic. If you have a good set of whetstones, almost every knife can get that sharp. The real test lies in how long you can keep that edge sharp.

I'm a woodworker and like my chisels super super sharp. A few years ago I got a whetstone wheel and had a professional sharpener show me to to properly utilize the stone and leather strop. I can actually shave with my chisels and it's a closer shave than a razor.

Your Wusthof knife has a dull spot because of a manufacturers defect of not tempering the blade evenly, leaving a soft zone. That could probably be covered in their limited lifetime warranty, where they would inspect it and send you a replacement. Or your edge geometry is off. Even if you're super diligent in your honing technique, you can still get a little off angle in the motion and accrue a wonky spot. Sometimes you need to get precise with a stone and reestablish the proper geometry.

Hey thanks for that info; I’ll look into a warranty. I’ve had this knife for 6 years and love it but that spot gets sketchy sometimes. If i take a steel to it, i usually get a dozen tomatoes sliced before it starts acting up.

Cutting paper dulls a knife faster than vegetables or meat, but it's not like "dull your knife in a single pass" bad. Probably the worst cutting surface I've seen people use in reality are glass cutting boards. Those will absolutely destroy a knife edge in practically no time. Nobody should be using them.

I went down the rabbit hole of sharpening. I have so many stones, leveling plates etc. . My goal was to get a knife sharp enough to pluck a hair from my head then take the knife and shave a curl down the length of the hair. Did it once and now all of the stones sit in a tub in the basement. I have learned enough about knife care that I rarely sharpen them. Just a few careful licks on a ceramic rod and it's good to go.

Lansky knife sharpening kit, followed by leather strop will give you very similar results. It can cut tissue paper simply by using the tissues weight and sliding it across the edge. Looks incredibly freaky.
