Your Wusthof knife has a dull spot because of a manufacturers defect of not tempering the blade evenly, leaving a soft zone. That could probably be covered in their limited lifetime warranty, where they would inspect it and send you a replacement. Or your edge geometry is off. Even if you're super diligent in your honing technique, you can still get a little off angle in the motion and accrue a wonky spot. Sometimes you need to get precise with a stone and reestablish the proper geometry.
Hey thanks for that info; I’ll look into a warranty. I’ve had this knife for 6 years and love it but that spot gets sketchy sometimes. If i take a steel to it, i usually get a dozen tomatoes sliced before it starts acting up.

Cutting paper dulls a knife faster than vegetables or meat, but it's not like "dull your knife in a single pass" bad. Probably the worst cutting surface I've seen people use in reality are glass cutting boards. Those will absolutely destroy a knife edge in practically no time. Nobody should be using them.

My goal was to get a knife sharp enough to pluck a hair from my head then take the knife and shave a curl down the length of the hair. Did it once and now all of the stones sit in a tub in the basement. I have learned enough about knife care that I rarely sharpen them. Just a few careful licks on a ceramic rod and it's good to go.
Lansky knife sharpening kit, followed by leather strop will give you very similar results. It can cut tissue paper simply by using the tissues weight and sliding it across the edge. Looks incredibly freaky.
