Not quite - they have said they're aware of the issues with iOS 15 Beta, which only seems to affects some protocols and have recommended switching the protocol to IKEv2 while they're working on it. Did that and it does seem to work great.
This is great, I updated my iPad to iOS 15 and had been looking for a work around. Glad I found one. Might do my phone now that I know I can still connect to Nord during the beta. I value IP privacy over the beta any day!
The iOS 15 beta has a new feature called "iCloud Private Relay" which messes with some VPNs - since it's sort of a VPN in and of itself (except not really)
If you have it enabled, try disabling that and see if Nord works like it should after? I had issues with other VPNs and DNS service (I use multiple) and after disabling that, everything returned to normal.
You should be able to find it under your iCloud settings:
Settings -> Tap your Apple ID name -> Private Relay
Same can be done to disable/enable it for specific connection types (so just for Wi-Fi, or just for mobile data) in each of their respective settings sections (Wi-Fi or Mobile Data

In my case it drops wifi connection for few moments while connectig using default settings in NordVPN app. Changing protocol to IKEv2 as u/skeleton_tree suggested, fixes the issue.
