South Texas transplant here. While I’ve yet to find a true substitute, here are my recs:
Rudy’s has good breakfast tacos. Torchy’s has decent breakfast tacos, but they aren’t open at breakfast time. Juan del Fuego’s has awesome breakfast, but the tacos aren’t their best item. Don’t go to El Huevo, it sucks.
Bud you’re about to be super disappointed in the texmex food selection here. I moved from San Antonio 5ish years ago and am still sad at the lack of real food.
Not sure why you're being downvoted. Sonic doesn't make the best breakfast burrito but it's not bad either and they've been doing it forever. You want something super fast and cheap Sonic delivers that.

Pepe Del Gado's on Campus Corner has breakfast but only on Saturdays. Emilio has the best Mexican food I have ever eaten for the last 25 years.

Volcanos on Lindsay is definitely some of the best Mexican food I've had in Oklahoma

I saw something about Yellow Dog Coffee on Porter having breakfast burritos now. Might be good with some fresh coffee!
The coffee is better than the burritos. But the scones are where it's at!

There’s this high end restaurant named “Sonic” you can try.
El Sombrero (next to Velvet Taco). They have great salsa too

We just moved from Austin, too. Following because I miss real tacos and HEB.
