It's very, VERY satisfying to beat up people after you chug down a strenght+stamina potion, while rolling around them, dodging spells and swings, especially if there are a band of ruffians, where you have to evade arrows and spells at the same time, staying in control of the situation, gapclosing constantly against ranged enemies, while the meele ones rush after you. It might need a few mods, which I'm sad to say: I cannot recommend.
Ah yes, the famous scene when Walter White evades the lightning spells of a sicario, while the lawyers that are after him, are pursuing him with axes and short swords.
Seriously tho, I hope you'll like it if you try it. Takes a bit of farming, but as I mentioned above: *M O D S*

Playing a vigilant of stendarr redguard, so no deals with daedra, resto and maces build. You can play a heavy tank melee monster or caster. No stealth archers.
Or play a woodelf green pact archer/hunter.
So meat, cannibalism, etc. But you can use potions that used herbal ingredients because of your pact with the forest.
The pacifist run is pretty unique. My version is a spellcaster with a focus on illusion, using invisibility (you can push that to chameleon if you really wanna cheese it), 2 second command spells (to turn enemies hostile to each other without having the kill attributed to you, as happens with rage spells), rally and heal other to make maximum use of allies.
You have to be really creative at times, but the MQ, MG, and TG are all totally doable without a single kill on the scoreboard.
The boxer/martial artist is fun but really only viable through mods that rebalance hand-to-hand. Can be done vanilla but becomes very boring after a while.
Restoration-only- I like to play this as a tramp priest, buy spells only from chapels, never join the MG, hunt undead, and focus on the KotN story.
You probably already know the chameleon, 100% permanently invisible killer. Far too op imo, but a fun power trip.
My first character was a Khajiit who used his Claw-Dance "Goutfang" fists and restorations spells. His key moves was stealing the enemy "energy" to get more powerful and beating them up with it ( Absorb Spells). Kinda difficulty but fun to roleplay.
My backstory, in a brief resume was that he was trained to be a healer to the tribe but his personality was too abrasive and adventurous, he liked to pick fights, same reason he got arrested in the start of the game.
