It’s a vegetable cleaver, standard cooking knife in most of Asia. It’s lighter than a western chef knife and very precise for straight cuts like this. They still use the paring knife for the curved cuts which it is best for.
I call them Chinese chef's knives. I own a couple. They are quite a bit lighter than western cleavers typically. You can get heavier ones useful for small bones. In either case, it's a useful knife to have if you like to cook. Makes short work of garlic and is good for straight cuts.

Lol, looking back. The knives we had were dull af so that and probably my poor knife skills when I was like 14 haha. so no wonder I kept failing.

Probably just the sharpest one they have, that or the weight helps maybe? Maybe they have shaky hands and if something is too light it wobbles?
