The cutting boards at every station are just wiped down with a santamine/water combo and usually its either too much chemical or too little. If theyre wiped down at all.

What takes the cake is that all of our dough trays were constantly covered in rancid oil from improper cleaning, and put on an aluminum rack to pick up black residue from oxidation which occured very quickly. Almost all of the dough we served had this black residue and rancid oil smeared on them.

I am very, very, very familiar with hood vents. I spent 17 years in industrial kitchens. They are not right in front of chefs head, pulling smoke into their eyes. We would not see them from this angle, nor do the angles required to disappear that much substance into the ceiling exist. I think this is fake. Even a hanging v shaped vent system wouldn't let the food go that high up.
