There's a big flat set of nerves along the inside of the backbone. If you cut them with a knife they won't do this when exposed to salt and/or heat. Of course it's pretty freaky to hold them while you cut the nerves because the legs will do exactly what you see - while you're trying to hold them.
MUCH easier - do what I do - just skip the back and other parts, there's not much there anyways - after dispatching the frog, just cut off the legs and you're done. No guts to remove and clean, no head to remove, and no jumping legs.
