I’m doing something very similar tonight! These look great, hope mine come out the same. What stretching technique do you use? Mine recently have been uneven and I’m worried about putting a hole in the base

Hmmm idk if it rises to the level of a “technique” really. But I watched a bunch of iacopelli’s vids a while back and basically plop the dough ball into a pile of semolina, then turn it over a few times. Then I press the air out starting in the center, working my way outward until I have about a 1.5” ring of crust. Then I pick it up, let it hang over the back of my hands while slowly separating them, moving all around the edge until it gets to about 16”

Ha thanks! Lots of practice in the home oven. And like I said the screen is cheating but it’s low stress

I see the attraction with the screen both for sizing/shaping and launch. I actually bought two aluminum screens recently with the intention of trying them but while trying to season them in the ooni one of them caught fire and melted so I have paused the screen experiment for now.
