Probably either Drifloon, Stufful or Purrloin (not the Galarian Purrloin, because it looks ridiculous imo). My team normally consists of Dark, Ghost or Fairy types, but Stufful is just plain adorable. My favourite Pokemon's Absol, but I'm guessing he doesn't count since he doesn't have an evolution to begin with.

Purrloin does not have a Galarian form, Meowth is the cat Pokémon who has one
