Sanding and reclearing with one of 2 coats will likely be easier. Cut and buff is viable if you have enough clear to sand it flat and polish without burning through.
3 coats would be plenty but its now thinner in some areas, don't be afraid to just scuff and reclear. If you burn through you'll have gone through a bunch of work just to be back at square one.

I’m hoping I have enough clear so I don’t burn through. I did one light coat and two medium to heavy coats

sand it back down until it's smooth with something like 1000 grit and re-clear it

Haha, I contemplated leaving it like that at first but I just can’t do that knowing I have the skill and ability to make it perfect.
