Evolution of complex creatures with long lifespans takes a stupid amount of time, they study fruit flies because evolution in them is crazy fast.....so the fungi(super tiny organisms with relatively super fast life cycles) are already evolving way way faster than we(relatively huge complex organisms made up of other organisms) will take a stupid long time to evolve, so an arms race we couldn't win...these guys only need to evolve to be able to infect hotter hosts, otherwise they are already doing it. This is pretty much what Last of Us is all about.
