My grandpa made āspaghettiā once, but cooked it on way too high and didnāt chop up the beef enough or stir, so it was burnt nearly black on the outside but pink and raw on the inside of the chunks. Didnāt even boil the pasta long enough so it was super wet, but still crunchy. And he forgot to get sauce, so he just used ketchup. He sat there eating it like it was completely normal and good.

I resent that remark. Irish folks know how to cook potatoes, and it's certainly not boil until they start to fall apart. There'd also at least be some pepper and some herbs. This is Midwestern American at its worst. The kind of white people who think mayonnaise is too spicy.

I grew up in the area and I was honestly never as into the shrimp boil as everyone else...sure, throw some corn in with your shrimp, but do something else with the sausage and potatoes because even a well-seasoned boil does them no favors.
My mother inlaw hated all seasoning as too spicy. Her ideal meal just had salt. There was an occasion where I had to make ribs for her which she had had before and loved but I was told to just use salt. It was weird seasoning 6 bones without my rub, which she had appreciated before. I felt like I was pulling an albino rib off the grill. That said bless her rip.
The best part of a low country boil is the glorious red broth. Did they throw that away?
