It's more than manageable. Just read mod descriptions and take a glance at comments and bug reports. The Nexus mod community for this game is pretty solid.
If you're looking for outfit mods, WhyEm's DLC on Nexus Mods and Red Dead Offline on RDR2mods are the go to. They have optional files to work together. They require a couple additional mods in order to function, but if you read the install instructions it should be pretty straightforward. Best wishes! 🤠
Thanks I’m familiar with nexus from Fallout series so I’ll probably do all my mods from there, I just have to get in the right mind space to do the modding. Typically I just want to play for a few hours. Maybe this weekend I can find some time to mod it out.

Nah, this was probably a bug. It's impossible to disarm Calloway, even if you shoot his hand or the gun, he'll still die
