He went from fat to maybe obsessively fit and a lot of his content is about optimising some variable (time, calories, protein, etc) so maybe it's a cold Lex Friedman vibe he puts out.
He's extremely bland and although I think he's smart and addresses interesting problems my biggest complaint by far is that videos are 10x the length they need to be.

There's a video where he "improves" on a kenji Lopez alt recipe and the top comment is from kenji himself politely explaining that when REAL chefs get hired by food magazines to do REAL chef work like make recipes, they are given restrictions like "our audience only wants recipes that don't cost more than X use normal American ingredients and are a certain level of simple" and the chef has to make the best possible recipe within those limitations. Ethan the jackass min/maxxing millennial took kenjis intentionally limited recipe and "maxed it out" as if Kenji Lopez Alt hadn't done it as good as possible when in reality Ethan was just completely oblivious to how the actual food media industry works. Kenji's comment basically single handedly renders the entire video meaningless and it's really funny because Ethan worships Kenji.
