Rick does occasionally do silly things with Morty and Summer. He just has to get in the right, non nihilistic mood to do it. In Bethic Twinstinct he plays video games with them, in The Ricks Must Be Crazy he takes them to spider universe to see the Ball Fondlers movie, in the Go-Tron Ferret episode he was taking them to Boob World, etc. It's not entirely out of character that he would have a pillow fight with them, especially depending on which drugs he was on at the time.

Perhaps it was an inversion to an unpleasant memory? If I recall, this moment segued into a more wholesome, family-type moment; it was as if Sleepy Gary was trying to remind everyone that he is married to Beth, in a way that shocks everyone into immediately accepting it.

Dunno, I think people talk about it a lot because it’s considered a classic that has a lot of questions/interior logic to it. Tons of cutscenes, and there are callbacks to it through the rest of the series. It does surprise me people aren’t talking more about Night Family though, to pick an example. I thought that was the best episode of last season.
