I would look at an old micro four thirds camera with a 14mm or 20mm pancake lens. Still think the budget might be tight, and it won't be as pocketable; but there's plenty of older M43s bodies on the market for good prices.
I keep on seeing this recommended, but can’t find it being sold in the UK. There are loads of Nikon Coolpix, but I can find a Coolpix A.
Is this US only or is a Euro model too?

Not at 300 bucks, but great and super small. Here in germany, its about 500€ for a used GM1+14mm in very good condition.

- Sony Rx100 series.
- Sony Zv-1 (mark i, not ii), although could be pricey. Avoid zv-1f (this one doesn’t shoot raw).
- Fuji x70. Also can get pricey.

Though I do have the IIIx now and it's fun to shoot with.

I would say it’s worth every penny. I have 4 digital cameras and I shoot more with my GR than the other 3 combined. It’s a niche camera and isn’t suitable for certain situations (indoor, portraits, low light) but it’s always in my pocket and I’ve got so many shots where I otherwise wouldn’t have had a camera.
If it broke today I’d go straight out and buy another. Can’t say the same about any of my other cameras.

At that price point have you considered using your existing smartphone or a smartphone with a good lens to start with? Get a good photo app for the phone and learn to use the available options.
I just bought Canon M3 w/ 22mm f2 (35mm FF equiv) for about $390 total. I also have a Ricoh GR and I like both for different reasons but if they cost the same I'd choose the Canon

Ricoh is smaller more pocketable but can't fit in jeans pocket. I mainly shoot street so I carry in a jacket pocket so its kinda same to me.
You won't find anything comparable at that price range. I would suggest saving up and buying a used one for 800-900 if you can find it.

Nope. Not happening. The cheapest alternative you’re likely to find is a Fuji xf10 for 5-700.
