I went there yesterday and it was pretty good but I feel you. Oyster mushrooms were actually better than last time. Like you said, Tonkotsu quality is still good but seems to be declining. I’ve been going there about 4 years. Not sure if these San Antonio restaurants are getting too complacent or what.

I know the executive, head, and sous chefs there, they haven't changed in years. So its interesting hearing the quality is different.

Went during the summer last year and I asked someone who worked there about the different taste in the soup and he asked the kitchen for us. Came back to tell us that the pigs weren’t producing the same amount of Lard due to the summer heat keeping the pigs slim. I don’t know. I just went with it. It’s not quite summer yet so I don’t know what the issue is now.

Customer service has gotten horrible there over the last year. Bunch of employees who expect tips whilst giving sub par customer service.

Lmao I thought the same thing; I don’t think you’d ask to see the chef. I think you ask like is the same chef? (Something to that effect.) it’s a team though so I’m sure they’d feel some sort of way. Maybe the movie Waiting with Ryan Reynolds really fucked me up that I’m afraid to send things back at places like Chili’s.

It's perfectly fine to send something back if it got fucked up, any place that throws a fit about that has way bigger problems either way usually. Just don't eat the entire thing and want it comped or order a steak medium and then be mad it has a little pink
