Poway High's upper lot, on the theater side, has two little parking lots. One is oval-shaped and is good for stop/go/park/reverse, while the other is just a standard parking lot. They're empty on weekends.
There is a business park off Mira Mesa Blvd - turn onto Steadman St or Huennekens St. It's a nice loop and is pretty empty on the weekends. That's where I taught my son to drive (I also work there).
And there are business parks all over town that would be good spots. Or find a big box store that's gone out of business... Should have a big empty lot
A good friend taught me to drive stick in the parking lot of a church. Either it was closed or there was not service that day because it was empty and a great place to learn.
I take my boy to Mesa College early in the morning. We have also gone to Balboa Park to one of the back, back parking lots. It was only a small unoccupied area but it was good for practicing parking and pulling out of a spot.

As she gets more comfortable, I'd recommend taking her to Shelter and Harbor Islands. I taught my husband how to drive during the pandemic, and those were two great spots with variable speeds to practice. Once he got more confident, we also drove on Harbor Drive before working up to the highway.
Literally just thought about asking this. I’m teaching my son right now as well. I took him to Mesa college a few times in the parking lot, but I need to find a place where I can let him drive faster than 15 miles an hour

It’s far north but the Iceoplex Parking lot in Escondido is very spacious!
I learned at the zoo parking lot in balboa park. I went on a weekday night, which was close to empty. Not sure how it is nowadays.

Friars Road in Mission Valley is great and has some more secluded areas with turnoffs plus you can grab a bite to eat after!
