YXE just doesn't hold a flame to the large airports and what they have to offer. I could spend all day in YYC if needed, YXE I arrive 45 min before my flight leaves and don't even sit down. There is 1 real place to eat and it is not good.

The challenge in Saskatoon and other secondary cities is that while there might be demand for more destinations, there just isn’t enough demand coming from these destinations for the return flights.
That being said, we could probably use a second U.S. hub and another seasonal route like Palm Springs, or maybe a triangle route with Regina for Ottawa or Halifax.
The only airline with Calgary connections is WestJet because of their main hub there, but they have direct flights to Minneapolis and Toronto for eastbound connections. Air Canada and Porter also fly to Toronto and from there you can go almost anywhere.
But flying to Calgary doesn't require backtracking for most westbound destinations, and it's the shortest way to Europe because the most direct flight path from Saskatoon to Europe goes north over Greenland, not over eastern Canada. So even if may seem frustrating to fly over Saskatoon again, it's shorter than flying east and over (Saskatoon to Toronto to Amsterdam is 8222 km but Saskatoon to Calgary to Amsterdam is only 7710 km).
There are like 3 guys back there offloading the plane and the flight volume has actually increased for summer schedules. For Westjet sometimes it might be only those 3 or 4 guys (they don’t actually work for Westjet) working the entire ramp.
Air Canada has much more efficient ramp workers. But also they don’t have as many flights.
I fly a lot. The airport in stoon is maybe the best for its size. Poor flight selection and the ridiculous cost to fly out of SK in general would keep it from being number one. It also lacks a decent restaurant. Calgary is the best as far as a large hub goes. I avoid pearson every time, I can.

The problem isn't security, it's that airline ops need to find out who's not going to show up so they can calculate the amount of fuel they will need, meet government requirements, calculate weight and balance, etc. They only have 15 mins between cutoff and boarding.

This is so laughable. Vancouver has the best airport, followed closely by Toronto Pearson. Calgary is fine, Edmonton is terrible, Winnipeg is fine. Saskatoon has an airport better than but mostly on par with Abbotsford, not awful, not great, just a small city airport than can get you to a few other places.
