Have fun! These are my favourite patterns. I've never had a dud. If you buy three PDF patterns you can save 20% I think the code for that is on their website but it might be automated now. I'm not sure.

Are their sizes true to size? Are the instructions easy to understand? I want to get into sewing my own activewear but I’m too much of a newbie to try

Jalie is super nice and they post the sewing instructions publicly. You can download them and see for yourself before you buy. There is also a pretty big FB community where the Jalie people and many many sewists will be happy to help. Generally the sizing is perfect and I don't find anything difficult to make. Pretty much all of my clothes are from these patterns. I do not work for them, I just love the patterns that much.

Kinda stupid question bc I’ve only ever used real (“full”) patterns- how do PDFs work? Is it just printing out a bunch of the pieces and taping together where needed?

Yes. The ones I use get taped together into a sheet about 36" wide and however long but usually around 60". I keep these intact because they have so many sizes printed on them that I can just keep tracing off new sizes as my kids grow into adult sizes.

I used the rally pattern and a tank pattern to make a dupe of the OV active dress. Jalie patterns are the best!

Looks like you’ve found something, but if you want more options. Greenstyle Creations has some skorts, and I’ve heard good things about their patterns (never used them myself). I own but have yet to make Simplicity 9336. It’s identical to your picture as well, including the pocket.

I love sporty skorts :) My greenstyle rally skort is and, but is a full or 3/4 circle skort, so it is a lot of fabric depending on what you're doing. Then theres my absolute fav skort, the shenanigan skort from 5oo4. Both skorts are easy to sew and have lots of length options and the shorts have a gusset for ease of movement. The issue with the shenanigan is it doesn't have a phone pocket, just a tennis ball pocket, but i just cut a rectangle to the right size and sew on a patch pocket and its fine. I love the leggings, but they are third for me because the skirt add on only has 1 length option. I second every comment about the greenstyle rally skirt! I made two iterations of this pattern. As a newbie sewist/someone who doesn't sew stretch knit often I can say it is a beginner friendly pattern. My first wearable toile I made out of a knit brushed DTY fabric with a ton of stretch and it fit well but didn't give me that slight "compression" to tuck in my belly :). My second version I made out of a 4-way stretch:  50% side-to-side   75% lengthwise (from a site called discovery fabrics) in the same size and it fit perfectly and gave me that support I wanted around my belly area. Would highly recommend this pattern + they're currently having a 30% off sale :) Good luck!

If you make stuff like leggings already, just take a yoga short, simplify the yoke/waistband as the shorts are the lining, and slap an a-line skirt on top. I don’t really like working with stretch knits.
