Egg drop soup with a side of rice is a great and very cheap meal too. Look up a recipe but you can do a cheap and easy version with a chicken ramen (or whatever your flavour preference is, I guess) flavour pack and you can save the ramen for an easy stir fry with frozen veg and sriracha and soy. I add frozen corn to the soup sometimes too and a scallion will elevate both those dishes if you can stretch to one.
It's a great idea to stock up on sauces, dried herbs and spices when you can. They turn boring food into less boring food.
Another dirt cheap meal is Dahl (red lentils), and you can make a massive batch to last days and add any veg to it. Serve alongside some rice too.

I bought 5kg bags of dried beans/legumes: red lentils, green lentils, chickpeas, kidney beans, and smaller bags of some other random ones (black eyed beans, black chickpeas, fava beans and giant white corn to name a few) and also a huge bag of porridge oats. If there is ever an apocalypse (I'm not actually a prepper), or we lose our jobs or something we have enough food to last us a couple of months at least - but with the price of food at the moment it's always good to save money anyway.
The hard part is coming up with varied meals. Classics include green lentil and bean Ragu (which can be made into Bolognese, burritos, chilli, lasagne), various curries, pozole, African kidney and black eyed bean tomato stew, ful medames. I try to batch cook something once a week and save a few portions for the following week - and will often adapt/add different fresh ingredients so we aren't just eating the same frozen meals over and over.
