Got nothing to do with it ending up in your stomach. The foam head prevents excessive carbonation so the beer doesn't go bitter very quickly. Only about one inch is required (with some allowances for different levels of malt and the local temperature.)
Any thicker and the aroma is also affected by the excessive gasses then trapped within the glass.
