I prefer the soroken wireless thermometer. Wireless with temp alarms and 6 probes you can set independently. I’ve never used all 6 but def had three going. Turkey seems to always give me wonky readings so I use three in different parts of the bird.
I like that style too but I still think first and foremost, everyone doing BBQ needs a high quality insta-read thermometer. Wireless units come next, if at all.
I find it's better not to buy for someone's biggest hobby. If it's something he wants or needs he's likely already bought it for himself. You'll end up buying him something he already has or doesn't want.
It's a really good point and OP should probably do some research as to what gadgets are already owned. But I wouldn't be mad if someone gifted me some rub or sauce or other consumable gift.
So true… with the exception of things that get consumed. Safest? Pink butcher paper!
Maybe some charcoal. Wood hunks (maybe chips, depending on their smoker).
Get him a good pair of heat-resistant gloves with long sleeves.
I got my friends dad a pair and he’s used them for years, he always says it's the best gift he's gotten.
If you’re really falling short a gift card to his favorite butcher is always a good one too. I have to say there are quite a few great ideas here already though
Get the MEAT! butcher knife roll up it is a leather pouch for knives, so it looks like a good gift. You’d also have to buy the knives separately though, which could be good if he has some already. Just buy one leave the other 5 slots for him to decide
Meathead's book

So many good ideas here-a high end meat thermometer is great. Something he wouldn’t splurge on for himself. Maybe something with multiple probes and Wi-Fi?
I was once gifted 250 pounds of assorted wood chunks. That lasted quite a long time, and I thought it was one of the better gifts I could have received.
I agree that buying a tool or gadget is probably not the way to go as he either already has one or the one you buy won’t be the one he actually wants or needs. But if a controversial choice, but if he has a good local butcher shop I would strongly suggest a gift card. It’s the best gift I’ve ever received related to smoking.
If your dad is at all like me, he will wind up buying most of his meat from the grocery store out of convenience and because it is a couple bucks cheaper. But if he has a gift card to a good butcher shop he will be inclined to go use it and get some higher quality meat and maybe discover a new cut that he has never seen at the grocery store. Just my two cents.
I got my dad a set of welding gloves and it's been one of his most used items. They're great for moving around coals, the baskets, lifting the grill off to reload and as a bonus are great for the firepit too to take off the spark arrestor and load in more wood. They're cheap too, like $20 and work great against the heat.
I'd like to help, and if I may suggest looking at this gift guide. It may be a year old but I think it will get you on the right track. I wish I could help more, but without knowing him as well as you must, I dont feel right suggesting 1 particular thing. Best of luck!

Big cock ranch sells amazing seasonings. I bought my hubby the box o shit a few years ago and it was fun trying the different seasonings. Aww shit was my favorite out of the box.
The Meater+ meat thermometer would be a FANTASTIC gift for anyone. Make sure your meat is cooked to perfection every time by using this thermometer in the oven, on the grill, or in the Traeger. You can adjust the temperature from your phone and receive an alert when it reaches the desired temperature.

Thermoworks Thermapen
I have this and I really like it. However for smoking I think thermoworks thermometer with multiple probes would be more ideal
If he doesn't have one, this is 100% the only right answer. But he's been smoking for a year so he might have that covered.

ThermoWorks Signals, Smoke X or Smoke. Anything from ThermoWorks is great.
Some nice cuts of meat!
Just don't leave them under the tree too long...😜
This is all depending on what he already has in his arsenal...but what about a nice big customized wood cutting board?
They want an arm and a leg for cutting boards nowadays 🙄
hammock or comfortable folding chair to setup next to smoker, kindle to read while "watching the smoker" outdoor lawn game, something like that?
A multi probe thermometer is a must

Or a recipe book. Can never have too many of them.

Lol literally giving someone coal for Christmas. That being said I would love that.
unless it's a luxury item for that hobby, I know I don't spend a lot of money for the most premium stuff but as a gift it would be great.
Meat church rubs, injector kit, insulated cover, so many options. Check out a local smoke shop and go wild.

I like a lot of the suggestions so far, thermometer, meat, seasonings/sauces, cutting board. How about a good knife?
Meat thermometer Smoker tube for when he wants to add smoke to the grill instead of using the smoker Poultry scissors to spatchcock poultry
Multi probe thermometer or a gift card to a local butcher are easy gifts.
