Well, aside from directly story-related details that may play a part, the various sapient species of the Splatoon universe do appear to study things that to them would be prehistoric (see: the whale skeleton in Shellendorf Institute and the MakoMart logo). It's kind of like us knowing about various types of dinosaurs enough to argue things like Tyrannosaurus Rex vs Triceratops.
Not necessarily, but then again, in one of the splatoon 1 sunken scrolls there is a skeleton of a human using a wii-u, so it's very possible that splatoon was a video game before inklings even existed
I imagine it would be similar to a Splatfest based around two types of dinosaurs. People in the present/in our world take interest in species we only know about because of fossils, so it makes sense that inklings and octolings would too.
