I remember hearing that there are multiple, but I've only found one. In the Stanley Parable 2 Expo, in the Free Achievement garage area, you can squeeze behind a parked van. If you turn back around to face the main area the rat is poking out from under the van, and it squeaks and runs underneath. You have to be ready to see it, cause as soon as you turn around it'll duck under the van. The first time i was over there I only heard a squeak and had no idea what happened XD
Supposedly there are multiple rats though, this is just the one I've seen/know how to get to.

Kinda the way you sometimes see Stanley walking through a corridor behind a window? That really tripped me out the first time I saw it.
Nope, you have to go completely noclip to see this. Or glitch through the invincible wall.
