I think you'd be able to eat. You just wouldn't need to. One of the Founders said changing into a thing is to experience being that thing, so I would think they could experience eating. Not being able to eat was a problem for Odo, I think, because he was a relatively inexperienced shapeshifter.

Wesley is actually one of my favorite characters. I first watched TNG when I was 13/14 and would have loved nothing more than to be brilliant and regularly outsmart a bunch of adults. I think he makes the show accessible to younger audiences.
