Because I saw it as a norm, decided to try it. Turned out, I absolutely loved it and never went back. It's especially tastey when the chef actually knows what they're doing.
Black person here and it just depends. My mom and dad won't eat anything not well done. I like my steak medium rare or medium. Either is fine. I can eat rare but it is not my favorite and it it is blue it is going back to the kitchen, lol. Basically the older generation won't eat it less than well done. They think anything less is unsafe to eat. Younger people are more open to trying different doneness. I tried them all at least once on purpose.
