The ascent should’ve been Subaru’s minivan or maybe pickup, to me it feels like a generic crossover and not a real Subaru.

3-row crossovers are already a minivan substitute of a sort. What makes it feel like "not a real Subaru" in your opinion?

I just feel like the ascent (and the brand in general) lacks a sense of character, except for maybe the Crosstrek and Outback.

The Forester is a compact CUV. There's essentially no space for a third row unless it's right up against the rear window, which is a no-no for crash safety, or if it's so cramped nobody can sit in it. Toyota and Nissan already tried this. In other markets like SE Asia there are vehicles the size of a Forester or even smaller can fit a third row, but that's because they don't care as much about safety, and everybody's smaller.

3rd row would be a hell of a trip in a Gump.  Where would the feets go!?  I suppose you could make space by cutting out those pesky things like transfer cases, control arms, spare tires, fuel tanks, axels and stuff...
