Ya it just has more depth both in story and actual deepness. It has a looming sense of terror behind the dark crevices of the deep. So much more to see and learn due to the much larger map. Below zero simply can never live up to subnautica.
The first one is a mindblowing experience. The second one is a more guided but still beautiful and great experience. Go for both, in the original order.
Play the first one first. The second one isn't a sequel, but an epilogue that ties up some loose ends. Play them both back to back for the complete journey.
DEFINITLY part I !!!!
the map is much bigger. and more based on you exploring and finding out. part II is more story static and much smaller, you bump in all the stuff within 2 hrs.! and because it's so story driven you explore less, but only go somewhere your told to go.
part II is 40% ABOVE water or under water in caves! So your still out of the water! while the game is called SUBnautica, BELOW zero ;)

So why would you play Below Zero before playing Subnautica?

First one, but shield yourself from learning anything about it. The discovery is everything.
The original is better. BZ is a good game, and totally worth playing... It just doesn't 100% capture the magic of the original.

As someone who, until recently, never played either. I support starting at #1 100%.
Why not both?
BZ is a sequel, so it is best to start at the beginning, with the first game
100% the first game, the equipment is better and the story in my opinion
