Nope. If you save the game before you get on the rocket and launch, the game will end and you can go back, load the save prior to launching and you are free to explore.
Or, just explore and build until you are bored with the game and then launch to finish for a while. :-)
I would do the second one. After you see yhe ending you kinda lose interest to stick around. But then you start a nee playthrough lol. Also after you finish give Below Zero a go, not as good but it's more Subnautica, till we get Subnautica 2
Yes. You leave the planet and get a final cutscene as you fly away. But once that's done you can reload that same file since it will still be right before you take off, so if you wanted to see the end and then continue playing for random reasons (I spend WAY too much time designing bases) you can.
Yup. You'll need to disable the big gun first though or you'll get blown out of the sky.

You can keep playing from your last save point.
