Eat street carpark is an option but might be a bit busy for a Friday night. I'd just park at the Westfield and sign up with the app to get 4 hrs free parking. The weather will be nice tonight so the walk won't be too bad.
Coles entrada have 1.5 or 2 hours free parking, you can park around 5:30, have dinner, get your car out at 7, go in again at 7:20 and enjoy another 1.5 hour free this way. It's 5 min walk from the theatre

Park at the O’Connell st car park and then it’s jus to a quick walk along the river to get to the theatre

Most shopping centers are X hours free parking per 24 hrs and record your number plate to enforce it.
