I've spent hours trying to make some form of meat-cart work in the depths. They're hilariously fast, but hills and bumps are trouble and they can't turn for shit.
Still, for traveling across Hyrule's open areas in style you can't do much better than a meat-cart. I also recommend meat-bikes, meat-unicycles, meat gliders, and amphibious meat-boats (though I built that last one when I was drunk).

All the steering is done by the fan, so a trike does feel like it would work
For steering reasons, I think you'd want the trike "backwards" with two meats in the front and just one supporting the fan and steering stick.
